Delicious Pasta & Salmon Recipe

Honey Smoked Salmon Spaghetti

Serves 4-6

8-12 ounces Honey Smoked Salmon (room temperature and flaked into 4-6 equal portions)

1 pound spaghetti pasta

2 tablespoons kosher salt

2 tablespoons olive oil

1 large onion, small diced

1 clove garlic, minced

1 green bell pepper, small diced

2(1 pound) cans tomatoes, chopped

1(8 ounces) can tomato sauce

1(12 ounces) can tomato paste

1 cup vegetable stock

2 tablespoons fresh parsley, minced

1 tablespoon brown sugar

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/4 teaspoon pepper

Fresh herbs optional

Parmesan cheese optional

 

Preheat a medium sauce pan to medium high. Add olive oil and lightly sweat onions, garlic and green peppers. Then add tomatoes, tomato sauce and paste, stock, parsley, brown sugar, dried oregano, dried basil, salt and pepper. Cook over a very low temperature for at least an hour, stirring occasionally. While sauce is simmering, cook pasta.

Fill an 8 quart or larger stockpot at least half full with water, add 2 tablespoons salt and bring to a rapid boil. Slowly add the pasta, stirring to prevent clumping. Allow the water to come to a boil again. Cook uncovered, with a fairly vigorous boil, for as long as the package directions say, usually about 10-12 minutes. When pasta is al dente, remove from the heat and drain in colander. Rinse under cold water to stop the cooking, and dry thoroughly. Return the pasta to the pot it was cooked in, mix with sauce until thoroughly combined, plate and top with Honey Smoked Salmon, optional herbs, cheese and serve immediately.
